Heath Jackson

It is with bittersweet joy that we announce that Heath Jackson, 59, of Weatherford, Texas, died August 21, 2026. Heath fought a courageous battle with pancreatic cancer.

Heath was a renaissance man in every way: artist, teacher, entrepreneur, motorcycle dude, bbq pit master, elite popcorn salesman, Boy Scout leader and volunteer, youth pastor, small group leader, and church deacon. Most importantly, Heath was a faithful disciple of Jesus Christ and that drove so much of his passion for loving people well.

Heath leaves behind his wife of 32 years, Mary, and his children: Bethany, Caleb, Naomi, and Genevieve along with two grandchildren Violet and Cobalt. They were the pride and joy of his life.

Heath was preceded in death by his father and mother, Jerry and Joyce Jackson. His childhood started as a blessing to his mother and father who adopted him in Ft. Wayne, Indiana, and soon moved to Ft. Collins, Colorado. Heath spent his joyous childhood in Ft. Collins and Northern Colorado, making many many friends along the way. Graduating from Rocky Mountain High School class of 1985, he attended Abilene Christian University and played football and was on the track team.

He graduated from ACU with his Bachelors Degree of Fine arts, Graphic design, and Sculpture. During his time in Abilene Heath made many life long friends, joining the football, track, and the Social Club Phi Quagmire. And most importantly, he met the love of his life Mary Jackson in 1985 during his freshman year. They both sat in the same chapel section, and the rest is history.

Heath and Mary got married on July 9th, 1994. Having three beautiful children named Bethany, Caleb, and Genevieve. They were members of Christ Fellowship, a cell based church filled with the Holy Spirit in the Ft Worth area. Heath and his family spent many years in community with CF, and the impact that God had on Heath’s life during that time has rippled out in ways we are still feeling to this day. Heath was a volunteer youth leader for CF, as well as a Cell Group Leader. Heath then felt the Lord’s calling to Weatherford and he and the Jackson Family moved to Weatherford in 2006. Shortly after in 2007 he joined a small church named New River Fellowship, and eventually after many years of volunteering as a Life Group leader, he and his wife Mary became Deacons at NRF and served faithfully for years.

Heath spent most of his professional career as a designer for many ad agencies around DFW, as well as running his own advertising endeavor in Ft Worth known as Your Neighborhood Shopper! After many successful years he had to close down the shopper due to the tough economic environment and pivoted to becoming a teacher in FWISD. He taught at Western Hills High School and taught Graphic Design there for 11 years. As well as teaching, Heath was a Lineman Football, and Head Wrestling Coach. Taking many wrestlers to District, Regional, and State championship tournaments. He is survived by all of his students and athletes that he had the honor of coaching, and he had such a rich life because of all of the lives he was able to pour into during his time coaching.

During this time, Heath also got extremely into smoking barbecue. Brisket was his specialty, and after many years of honing his craft he decided to start Coach’s BBQ, a local artisanal BBQ Catering service. He was blessed to cook for so many different folks, and brought his BBQ trailer all over Texas connecting with so many different people from different walks of life through his BBQ.

Heath lived many lives, among them was his time in community with his Motorcycle Club, DCMC and Grave Robbers MC. Heath “Grit” Jackson rode all over the USA, and even made trips to the UK to visit many fellow bikers. He found fellowship and lifelong friendships discipling to so many different Bikers and even ministering to the 1% community. Heath loved his time in his clubs and was eternally grateful for the brotherhood they provided to him.

Heath will be laid to rest at Bethel Methodist Cemetery, just down the road from the Jackson home.
